Plantain is a Starchy vegetable that can be a part of a weight loss diet if eaten in moderation and combined with other healthy food items. In my country of birth, roasted plantain( a.k.a BOLI )  which is essentially grilled like barbecue is a favorite snack and I have devised a way to eat it in moderation and feel full.

Recipe:

  • 1 medium sized plantain halved
  • 1 bunch of water cress
  • 6 Raw king Prawns cleaned
  • 1/2 a lemon juiced
  • medium size sweet bell pepper
  • 1 Tablespoon Peanut butter
  • 1 Tablespoon balsamic dressing

Pre-Heat the oven to 180 degrees Celsius and marinate the raw prawns in the freshly squeezed lemon juice. Peel the plantain and put the flesh on a baking tray and place in the oven. Bake till cooked through ( when a fork can go through and come out clean) about 20 minutes. Cut down the middle and add the peanut butter. Separate the water cress leaves and pluck the leaves from the thicker stalks and roots. Thoroughly wash the leaves in a diluted water vinegar solution then rinse about three times. Dry your leaves by spinning them in a salad spinner and set aside. In a stove top pan grill, grill the prawns until cooked and turned a delicious pink color. Thoroughly wash and slice the sweet bell pepper. Toss the salad and add the dressing. Serve with the Baked plantain.
