Jollof rice is a favourite West African dish which is quite easy to make. It is a good way to increase your use of processed tomatoes ( paste).


  • 2 cups Basmati Rice
  • 170 gms tomato Paste
  • 2 large Tomatoe Fruits
  • 1 white Onion
  • 4 Tbsp coconut oil
  • 250 mls chicken stock ( any stock will do)
  • 1 Teaspoon dried parsley/thyme leaves
  • Salt to taste

In a food processor, blend together 1 large tomato fruit and onion. Put a deep bottom non stick pan on heat and add 4 tbsp coconut oil; gently heat it up, then add the tomato paste and fry for about 3 minutes. Meanwhile, wash the rice, pour in a strainer and set aside. Add the blended tomatoes and onions to the frying tomato paste and simmer for 5 minutes. Go ahead and slice the remaining tomato fruit and set aside. Pour in the strained rice and fry on full heat stirring continuously for 7 minutes. Pour in the fried rice et all into your rice cooker, add the chicken stock, sliced tomatoe, salt to taste and dried parsley. Add more water according to your rice cooker instruction manual and cook till ready. THATS YOUR LYCOPENE ENRICHED RICE…..Yummy…
